Just teach yourself statistics with a book over the course of a week. Pretty much just high school review for me, save for the last two weeks where the topic was interesting. Take the AP Stat exam for credit. There's two large homework assignments you can do in a day.

Course material is very intuitive and not tremendously time consuming outside of a couple written assignments. The grading scheme is also fairly generous and spread out.

Do practice problems weekly and follow along in lectures.
